Method
Simmer the rinsed lentils in a pot of salted water for 22 minutes until tender but not collapsing, then drain.
Shred the red cabbage finely and slice the onion.
Sauté the onion and cabbage in a large skillet with half the olive oil over medium heat for 8 minutes until softened and glossy.
Add the vinegar and cook for 2 minutes so the cabbage turns bright purple again.
Whisk the mustard with the remaining oil and toss the warm lentils through it.
Fold the cabbage and the diced apple into the lentils and finish with parsley, salt and black pepper.
