Ingredients

  • Black BeansPantry1 cup
  • Sweet PotatoProduce1 piece
  • Crushed TomatoesPantry1 cup
  • Yellow OnionProduce½ piece
  • Chipotle PastePantry1 tsp
  • Ground CuminPantry1 tsp
  • Sweet CornFrozen½ cup
  • LimeProduce½ piece

Method

  1. Sauté the diced onion in a pot with a splash of oil over medium heat for 6 minutes.
  2. Stir in the cumin and chipotle paste and cook for 1 minute until the kitchen smells smoky.
  3. Add the peeled and cubed sweet potato, the crushed tomatoes and 1 cup of water and bring to a boil.
  4. Reduce to a simmer, cover and cook for 18 minutes until the sweet potato is tender but still holds its shape.
  5. Add the drained black beans and the corn and simmer uncovered for 6 minutes so the chilli thickens.
  6. Finish with the juice of the lime and season with salt.
