Method
Simmer the rinsed lentils in a pot of water for 20 minutes until tender, then drain.
Sauté the diced onion in a skillet with a splash of oil over medium heat for 6 minutes.
Stir in the chipotle and tomato paste and cook for 2 minutes until the mix turns brick red.
Add the lentils and 3 tablespoons of water and cook for 4 minutes, mashing lightly so the filling holds together.
Shred the cabbage and toss it with the lime juice and a pinch of salt.
