Ingredients

  • Red LentilsPantry¾ cup
  • Coconut MilkPantry½ cup
  • Yellow OnionProduce½ piece
  • GarlicProduce2 clove
  • GingerProduce1 tsp
  • Curry PowderPantry1½ tsp
  • Baby SpinachProduce1 cup
  • Basmati RicePantry2 oz

Method

  1. Sauté the diced onion in a saucepan with a splash of oil over medium heat for 5 minutes until soft and translucent.
  2. Stir in the minced garlic, grated ginger and curry powder and cook for 1 minute until fragrant.
  3. Add the rinsed lentils, the coconut milk and 1 cup of water, bring to a boil then reduce to a gentle simmer.
  4. Simmer uncovered for 18 minutes, stirring every few minutes, until the lentils collapse into a thick dal.
  5. Meanwhile cook the basmati rice in a separate pot of boiling salted water for 10 minutes and drain.
  6. Stir the spinach through the dal until wilted, season with salt and serve over the rice.
