  • Coconut MilkPantry¾ cup

Method

  1. Simmer the jasmine rice in a covered saucepan with double its volume of water for 12 minutes, then leave it to steam off the heat.

  3. Cook the curry paste in the same pan over medium heat for 1 minute until it smells fragrant.
  4. Pour in the coconut milk, bring to a gentle simmer and cook for 5 minutes to thicken slightly.
  5. Add the trimmed green beans and sliced pepper and simmer for 6 minutes until just tender.
  6. Return the tofu to the pan for 2 minutes, finish with a squeeze of lime and serve over the rice.
