Method
Cook the spaghetti in generously salted boiling water for 1 minute less than the package says, reserving 1 cup of the pasta water before draining.
Toast the black pepper in a dry skillet over medium heat for 1 minute until fragrant.
Finely grate the parmesan and pecorino together.
Add the butter and a splash of the reserved pasta water to the skillet with the pepper and melt over low heat.
Add the drained spaghetti to the skillet and toss, then remove from the heat and add the grated cheese a handful at a time, tossing constantly.
Loosen with more pasta water as needed until glossy and creamy.
