Method
Rinse the basmati rice and simmer in 5 fl oz of water, covered, for 15 minutes until fluffy.
Cut the chicken breast into bite-size chunks and toss in the flour to coat lightly.
Heat a skillet with a little oil over medium-high heat and fry the chicken for 6 minutes, turning, until golden and cooked through; set aside.
Dice the bell pepper and stir-fry in the same skillet for 3 minutes.
Whisk together the ketchup, soy sauce, and honey with 2 tablespoons of water to make the sweet and sour sauce.
Return the chicken to the skillet with the corn, pour in the sauce, and simmer for 3 minutes until glossy and thickened.
Serve the sweet and sour chicken over the rice.
