Method
Rinse the basmati rice and simmer in 5 fl oz of water, covered, for 15 minutes until fluffy.
Cut the chicken thighs into bite-size pieces and mince the garlic.
Heat a skillet over medium-high heat and cook the chicken for 6 minutes, turning occasionally, until browned and cooked through.
Add the garlic and frozen corn and cook for 2 minutes.
Pour in the BBQ sauce and a splash of water, tossing to coat the chicken, and simmer for 3 minutes until glossy and sticky.
Spoon the rice into a bowl and top with the sticky BBQ chicken.
Garnish with sliced green onions before serving.
