Method
Cut the potatoes into half inch cubes and boil them in salted water for 8 minutes, then drain well and let the steam escape.
Heat the olive oil in a wide skillet over medium-high heat and add the potatoes in a single layer.
Fry them undisturbed for 6 minutes so a crust forms, then turn and cook 4 minutes more.
Push the potatoes to one side, add the sliced onion and smoked paprika and cook for 4 minutes.
Stir in the drained white beans and the squeezed out sauerkraut and cook for 3 minutes just to warm through.
Take off the heat, scatter with the dill and season with black pepper.
