Method

  1. Cut the pork shoulder into large chunks and season them with the cumin and salt.
  2. Sear the pork in a heavy pot over high heat for 6 minutes until browned on several sides.
  3. Add the chipotle paste, half the sliced onion and 1 cup of water, cover and simmer for 25 minutes until the meat shreds easily.
  4. Shred the pork with two forks and let it bubble uncovered for 4 minutes so it soaks up the last of the sauce.
  5. Shred the cabbage and toss it with the rest of the onion and the juice of one lime.
  6. Warm the tortillas in a dry pan for 20 seconds a side and load them with pork, slaw and cilantro.
