Method

  1. Cook the jasmine rice in a covered saucepan with double its volume of water for 12 minutes and rest off the heat.
  2. Cut the pork into 1 inch cubes and toss them with the cornstarch and a pinch of salt.
  3. Fry the pork in a hot skillet with a little oil for 7 minutes, turning, until crisp and cooked through, then set it aside.
  4. Stir fry the chunks of pepper in the same pan over high heat for 3 minutes.
  5. Add the ketchup, rice vinegar, soy sauce, pineapple with 3 tablespoons of its juice, and simmer for 3 minutes until glossy.
  6. Return the pork and toss for 1 minute so the sauce clings, then serve over the rice.
