Method
Toast the pumpkin seeds in a dry skillet over medium heat for 3 minutes, shaking the pan until they start to pop, then tip onto a plate to cool.
Drain and rinse the chickpeas well and pat them dry so the dressing clings.
Dice the cucumber and tomato into half inch pieces and slice the red onion as thinly as you can.
Whisk the olive oil with the juice of the lemon, a pinch of salt and plenty of black pepper.
Toss the chickpeas and vegetables through the dressing and leave to sit for 5 minutes so the onion mellows.
Fold in the chopped parsley and scatter the toasted seeds over the top.
