Method
Rinse the quinoa under cold water, then simmer it in a saucepan with double its volume of salted water for 14 minutes.
Take the pan off the heat, cover and rest for 5 minutes, then spread the quinoa on a plate to cool quickly.
Finely dice the cucumber and tomato and chop the parsley and mint as small as you can manage.
Whisk the olive oil with the juice of the lemon and a good pinch of salt.
Toss the cooled quinoa, chickpeas, vegetables and herbs through the dressing.
Leave for 5 minutes before eating so the grains soak up the lemon.
