Method
Preheat the oven to 425°F.
Halve the baby potatoes, toss them with half the olive oil and salt and roast for 30 minutes until crisp.
Take the steak out of the fridge and let it come to room temperature, then season it heavily with salt.
Sear it in a dry cast iron skillet over the highest heat for 3 minutes per side for medium rare, then rest it for 6 minutes.
Chop the parsley and garlic finely and mix with the vinegar, chili flakes and the rest of the oil to make the chimichurri.
Toss the hot potatoes in half the chimichurri, slice the steak against the grain and spoon the rest over with the arugula alongside.
