Ingredients

  • Salmon FilletMeat & Seafood5 oz
  • Jasmine RicePantry2½ oz
  • Soy SaucePantry1½ tbsp
  • Sesame OilPantry1 tsp
  • EdamameFrozen½ cup
  • AvocadoProduce½ piece
  • CucumberProduce½ piece
  • Rice VinegarPantry1 tbsp

Method

  1. Cook the jasmine rice in a covered saucepan with double its volume of water for 12 minutes, then fold the rice vinegar through and let it cool to warm.
  2. Boil the edamame in salted water for 3 minutes and drain.
  3. Sear the salmon in a hot skillet skin side down for 4 minutes, then 2 minutes on the flesh side, so the centre stays just translucent.
  4. Flake the salmon into large chunks and toss them gently with the soy sauce and sesame oil.
  5. Slice the cucumber into thin half moons and the avocado into wedges.
  6. Build the bowl with rice, salmon, edamame, cucumber and avocado and spoon any leftover dressing over.
