Method
Cook the jasmine rice in a covered saucepan with double its volume of water for 12 minutes, then stir the rice vinegar through it.
Pat the tuna loin completely dry and season it with salt on both sides.
Press the sesame seeds firmly onto every surface of the tuna.
Sear it in a very hot skillet with a little oil for 90 seconds per side so the centre stays ruby.
Rest the tuna for 3 minutes, then slice it against the grain into thick pieces.
Build the bowl with rice, sliced cucumber and avocado, lay the tuna on top and finish with soy sauce and spring onion.
