Method

  1. Shred the cabbage finely and toss it with the mayonnaise, vinegar, sliced onion and a pinch of salt.
  2. Divide the beef into two loose balls without compacting them and season the outsides heavily.
  3. Heat a cast iron skillet until it is almost smoking.
  4. Put the balls in the dry pan and smash each one flat with a spatula, then leave them untouched for 2 minutes to build a crust.
  5. Flip, lay the cheddar on top and cook for 1 more minute until it melts.
  6. Toast the bun in the beef fat for 30 seconds, spread with mustard and stack the patties and slaw.
