Method

  1. Cook the rice in a covered saucepan with double its volume of water for 12 minutes, then spread it out to cool and dry.
  2. Heat the sesame oil in a wok over high heat and scramble the beaten egg for 40 seconds, then tip it out.
  3. Sear the dried shrimp in the same wok for 90 seconds per side until pink, then set them aside with the egg.
  4. Add the minced garlic and the peas and stir fry for 2 minutes.
  5. Tip in the cold rice, press it against the wok for 1 minute to crisp, then toss for 2 minutes.
  6. Return the shrimp and egg, splash in the soy sauce and finish with the sliced spring onion.
