Method
Cook the spaghetti in salted boiling water for 1 minute less than the package says, reserving 0.5 cup of the pasta water before draining.
Squeeze the sausage meat out of its casing into a hot skillet and brown for 5 minutes, breaking it up with a spoon.
Mince the garlic and add it with the red pepper flakes to the skillet, cooking for 1 minute until fragrant.
Pour in the strained tomatoes and simmer for 6 minutes until slightly thickened.
Add the drained spaghetti and a splash of the reserved pasta water, tossing to coat.
Tear in most of the basil and toss through.
Grate the parmesan over the top and scatter with the remaining basil to serve.
