Ingredients

  • Soba NoodlesPantry3 oz
  • EdamameFrozen½ cup
  • CucumberProduce½ piece
  • CarrotProduce1 piece
  • Soy SaucePantry1 tbsp
  • Sesame OilPantry1 tsp
  • Rice VinegarPantry1 tbsp
  • Sesame SeedsPantry1 tsp

Method

  1. Boil the soba noodles in a large pot of unsalted water for 5 minutes, stirring so they do not clump.
  2. Add the edamame to the same pot for the final 3 minutes.
  3. Drain both and rinse under cold running water until completely cool, then shake dry.
  4. Cut the cucumber and carrot into fine matchsticks.
  5. Whisk the soy sauce, sesame oil and rice vinegar together with 1 teaspoon of sugar.
  6. Toss the noodles, edamame and vegetables through the dressing and finish with the sesame seeds.
