  • Peanut ButterPantry2 tbsp

Method

  1. Boil a pot of water, drop in the rice noodles off the heat and leave for 6 minutes until just tender, then drain and rinse under cold water.
  2. Whisk the peanut butter, soy sauce, sesame oil, the juice of the lime and 3 tablespoons of warm water into a pourable sauce.
  3. Cut the carrot into matchsticks and shred the red cabbage as finely as possible.
  4. Warm a large skillet over high heat and stir fry the carrot and cabbage for 2 minutes so they keep their bite.
  5. Add the drained noodles and the peanut sauce and toss for 1 minute until every strand is coated.
  6. Serve topped with the sliced spring onion.
