Method
Cook the penne in salted boiling water for 2 minutes less than the package says, then drain, reserving 0.5 cup of the pasta water.
Squeeze the sausage meat out of its casing into a hot skillet and brown for 5 minutes, breaking it up with a spoon.
Dice the bell pepper and onion, mince the garlic, and add them to the skillet, cooking for 4 minutes until softened.
Pour in the strained tomatoes and simmer for 6 minutes until thickened.
Add the drained penne and a splash of the reserved pasta water, tossing to coat.
Simmer for 1 minute until the sauce clings to the pasta.
