Method
Cover the cashews with boiling water and leave them to soften while everything else cooks.
Boil the penne in well salted water for 10 minutes until al dente, saving a cup of the cooking water before draining.
Sauté the sliced garlic in the olive oil over low heat for 2 minutes until pale gold, never letting it brown.
Blend the drained cashews, red peppers, garlic, nutritional yeast and a splash of the pasta water into a smooth sauce.
Return the sauce to the pan over low heat, add the pasta and spinach and toss for 2 minutes, loosening with more pasta water as needed.
Season with salt, black pepper and a little more nutritional yeast on top.
