Method
Drain the chickpeas and dry them thoroughly on a towel so they crisp rather than steam.
Fry them in a skillet with the olive oil over medium-high heat for 9 minutes, shaking often, until the skins split and rattle.
Tear the sourdough into rough croutons, add them to the pan for the last 4 minutes and toss until golden.
Whisk the tahini with the lemon juice, grated garlic, nutritional yeast, a pinch of salt and 3 tablespoons of water into a pourable dressing.
