Method
Sauté the diced onion in a heavy pot with a splash of oil over medium heat for 6 minutes until golden.
Add the cumin and cinnamon and cook for 1 minute so the spices bloom in the oil.
Stir in the cubed butternut squash, the crushed tomatoes and 1 cup of water and bring to a boil.
Reduce the heat, cover and simmer for 18 minutes until the squash is tender at the centre.
Add the drained chickpeas and cook uncovered for 5 more minutes so the sauce reduces and clings.
Cover the couscous with an equal volume of boiling water, leave for 5 minutes, fluff with a fork and serve the tagine on top with the parsley.
