Method
Heat the sesame oil in a pot over high heat and fry the ground pork for 6 minutes, breaking it up until browned and crisp in places.
Add the grated ginger and minced garlic and cook for 1 minute until fragrant.
Pour in 2.5 cups of water and the soy sauce, bring to a boil and simmer for 6 minutes.
Add the rice noodles and cook for 4 minutes until tender.
Drop in the halved bok choy for the last 2 minutes so the leaves wilt but the stems stay crisp.
