Method

  1. Freeze the steak for 15 minutes, then slice it as thinly as possible against the grain.
  2. Heat half the olive oil in a large skillet over medium-high heat and cook the sliced onion, pepper and mushrooms for 10 minutes until soft and caramelised.
  3. Push the vegetables aside, raise the heat and sear the beef in one layer for 90 seconds per side.
  4. Chop everything together in the pan with the edge of the spatula and season well.
  5. Lay the provolone over the top, drop the heat to low and cover for 2 minutes until it melts.
  6. Split the baguette, toast the cut sides in the pan for 1 minute and pile the filling in.
