Method
Preheat the oven to 400°F.
Boil the peeled and chunked potatoes in salted water for 18 minutes until a knife slides through easily, then drain.
While they cook, sauté the diced onion and carrot in a pan with half the oil over medium heat for 8 minutes.
Stir in the tomato paste, thyme, rinsed lentils and broth, then simmer for 22 minutes until the lentils are soft and the sauce is thick.
Mash the potatoes with the remaining olive oil, a splash of the cooking water and plenty of salt.
Spoon the lentils into a small baking dish, spread the mash over the top and rough it up with a fork.
Bake for 20 minutes until the peaks are golden and the edges bubble.
