Ingredients

  • Arborio RicePantry2½ oz
  • Cremini MushroomsProduce4 oz
  • GarlicProduce3 clove
  • Yellow OnionProduce½ piece
  • Vegetable BrothPantry1½ cup
  • Nutritional YeastPantry1½ tbsp
  • Olive OilPantry1 tbsp
  • Fresh ThymeProduce1 tsp

Method

  1. Warm the vegetable broth in a small saucepan and keep it at a bare simmer.
  2. Fry the sliced mushrooms in half the olive oil over high heat for 6 minutes until browned, then lift them out.
  3. Lower the heat, add the rest of the oil and sauté the diced onion for 5 minutes until soft.
  4. Stir in the minced garlic and the rice and toast for 2 minutes until the grains look translucent at the edges.
  5. Add the hot broth one ladle at a time, stirring often and waiting until each addition is absorbed, for about 18 minutes.
  6. Fold the mushrooms, thyme and nutritional yeast back in and season well before serving.
