Method
Preheat the oven to 425°F and line a baking sheet.
Cut the sweet potato into 1 inch cubes, toss with half the olive oil and the smoked paprika and roast for 25 minutes, turning once.
Add the drained chickpeas to the sheet for the final 10 minutes so they dry out and crisp.
Simmer the quinoa in a saucepan with double its volume of water for 14 minutes, then rest covered for 5 minutes and fluff with a fork.
Massage the torn kale with the remaining olive oil and a pinch of salt for 1 minute until it softens and darkens.
Whisk the tahini with the lemon juice and 2 tablespoons of water into a pourable dressing.
Build the bowl with quinoa, kale, sweet potato and chickpeas and spoon the dressing over.
