Method
Sauté the diced onion in a wide pan with the olive oil over medium heat for 6 minutes until soft.
Add the sliced garlic and smoked paprika and cook for 1 minute, stirring so the paprika does not burn.
Pour in the crushed tomatoes with half a cup of water and simmer for 8 minutes.
Stir in the drained chickpeas and simmer for 5 more minutes until the sauce thickens.
Season the cod, lay it on top of the stew, cover the pan and poach gently for 8 minutes until it flakes.
Fold the spinach into the sauce around the fish and season with salt before serving.
