Method
Fry the diced chorizo in a dry pot over medium heat for 5 minutes until the red oil runs out of it.
Add the diced onion and pepper and cook for 7 minutes in the chorizo fat until soft.
Stir in the sliced garlic and smoked paprika and cook for 1 minute.
Pour in the crushed tomatoes with half a cup of water and simmer for 10 minutes.
Add the drained chickpeas and simmer for 5 more minutes so the stew thickens around them.
Fold the spinach through until wilted and check the seasoning before serving.
