Ingredients

  • Penne PastaPantry3 oz
  • Bell PepperProduce1½ piece
  • Cherry TomatoesProduce½ cup
  • GarlicProduce2 clove
  • Olive OilPantry1 tbsp
  • Parmesan CheeseDairy & Eggs1 oz
  • BasilProduce2 tbsp

Method

  1. Bring a pot of salted water to a boil and cook the penne for 10 minutes until al dente, then drain.
  2. Quarter the bell peppers and halve the cherry tomatoes.
  3. Heat the olive oil in a skillet over high heat and char the peppers for 6 minutes, turning occasionally, until blistered.
  4. Add the tomatoes and minced garlic and cook for 2 minutes until the tomatoes start to soften.
  5. Transfer the peppers and tomatoes to a blender with a splash of pasta water and blitz into a chunky sauce.
  6. Toss the sauce with the drained pasta, then plate and top with grated Parmesan and torn basil.
