Method
Dice the carrot, celery and onion very finely and sauté them in a heavy pot with a little oil over medium heat for 10 minutes.
Push them aside, raise the heat and brown the ground beef for 7 minutes without stirring too often.
Stir in the tomato paste and cook for 2 minutes until it darkens to brick red.
Add the crushed tomatoes and 1 cup of water, bring to a boil then drop to the lowest simmer.
Cook uncovered for 25 minutes, stirring occasionally, until the sauce is thick and glossy.
Boil the rigatoni for 11 minutes, toss it through the ragù with a splash of pasta water and finish with grated parmesan.
