  • BBQ SaucePantry3 tbsp
  • Burger BunsBakery1 piece
  • Red CabbageProduce1 cup
  • CarrotProduce1 piece
  • Apple Cider VinegarPantry1 tbsp
  • Smoked PaprikaPantry1 tsp

Method

  1. Drain the jackfruit and pull it apart with two forks until it looks like shredded meat.
  2. Fry it in a skillet with half the olive oil over medium-high heat for 8 minutes until the edges darken and dry out.
  3. Stir in the smoked paprika and BBQ sauce with 2 tablespoons of water and simmer for 5 minutes until sticky.
  4. Shred the cabbage and carrot and toss them with the vinegar, the rest of the oil and a pinch of salt.
  5. Toast the cut sides of the bun in a dry pan for 1 minute until golden.
  6. Pile the jackfruit into the bun and top generously with the slaw.
