Method
Drain the jackfruit and pull it apart with two forks until it looks like shredded meat.
Fry it in a skillet with half the olive oil over medium-high heat for 8 minutes until the edges darken and dry out.
Stir in the smoked paprika and BBQ sauce with 2 tablespoons of water and simmer for 5 minutes until sticky.
Shred the cabbage and carrot and toss them with the vinegar, the rest of the oil and a pinch of salt.
Toast the cut sides of the bun in a dry pan for 1 minute until golden.
Pile the jackfruit into the bun and top generously with the slaw.
