Method
Preheat the oven to 425°F.
Prick the potato all over with a fork, rub it with a little oil and salt and bake for 55 minutes until the skin is crisp and it gives when squeezed.
Cover the peas with boiling water for 3 minutes, then drain them.
Drain the tuna well and mix it with the mayonnaise, peas, sliced spring onion and a squeeze of lemon.
Split the hot potato down the middle, fluff the inside with a fork and pile the tuna mix in.
Scatter the grated cheddar over and return to the oven for 6 minutes until it melts and bubbles.
