Ingredients

  • Pasta ShellsPantry3 oz
  • RicottaDairy & Eggs¾ cup
  • Baby SpinachProduce2 cup
  • Crushed TomatoesPantry1 cup
  • GarlicProduce2 clove
  • Parmesan CheeseDairy & Eggs2 tbsp

Method

  1. Preheat the oven to 400°F.
  2. Boil the pasta shells in salted water for 8 minutes so they are still firm, then drain and cool under running water.
  3. Wilt the spinach in a dry pan for 2 minutes, squeeze out every drop of liquid and chop it finely.
  4. Mix the spinach with the ricotta, half the parmesan, salt and black pepper.
  5. Simmer the crushed tomatoes with the sliced garlic and oregano for 6 minutes, then spread the sauce in a small baking dish.
  6. Fill each shell with the ricotta mix, nestle them into the sauce and scatter the remaining parmesan on top.
  7. Bake for 20 minutes until bubbling and browned at the edges.
