Method
Mix half the yogurt with the garam masala, grated ginger, minced garlic, half the lemon juice and plenty of salt.
Cut the chicken into large chunks and coat them in the marinade, then leave for 15 minutes.
Preheat the oven to 450°F and line a tray.
Thread the chicken and thick wedges of red onion onto skewers and bake for 18 minutes, turning once, until charred at the edges.
Cook the basmati rice according to the packet directions, or bake it covered with double its volume of boiling water for 20 minutes.
Serve the skewers on the rice with the rest of the yogurt and the remaining lemon.
