Method
Simmer the pearl barley in a pot of salted water for 22 minutes until chewy but tender, then drain.
Cut the cooked beets into wedges and slice the apple into thin matchsticks.
Whisk the mustard with the olive oil and a splash of water into a loose dressing.
Toss the warm barley through half the dressing so it soaks it up.
Flake the smoked mackerel into large pieces, discarding any skin.
Build the bowl with barley, arugula, beets, apple and mackerel and spoon over the rest of the dressing with the dill.
