Method

  1. Preheat the oven to 400°F. Cut the potatoes into wedges, toss with a little oil, and roast on a tray for 30 minutes, flipping halfway, until golden and crisp.
  2. Season the steak generously on both sides with black pepper and a pinch of salt, pressing the pepper into the meat.
  3. Heat a heavy skillet over high heat until smoking, add the butter, and sear the steak for 3 minutes per side for medium-rare.
  4. Remove the steak to rest on a plate; mince the garlic and add it to the same skillet over medium heat for 30 seconds.
  5. Pour in the beef broth, scraping up the browned bits, then stir in the heavy cream and simmer for 3 minutes until thickened.
  6. Slice the rested steak against the grain and plate with the roasted potato wedges.
  7. Spoon the peppercorn sauce generously over the steak and serve immediately.
