Method
Heat the sesame oil in a saucepan over medium-high heat and fry the sliced shiitake for 5 minutes until deeply browned at the edges.
Stir in the minced garlic and grated ginger and cook for 30 seconds.
Pour in 2 cups of water, bring to a simmer and cook for 5 minutes to build the broth.
Take the pan off the heat, whisk the miso paste with a ladle of the hot broth in a small bowl, then stir it back in so it never boils.
Return to a low simmer, add the ramen noodles and the halved bok choy and cook for 4 minutes.
Ladle into a deep bowl and finish with the sliced spring onion.
