Method
Rinse the basmati rice and simmer in salted water for 12 minutes until tender; drain.
Cube the chicken breast and slice the bell pepper.
Heat a splash of oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes, stirring, until browned and cooked through to 165°F.
Add the bell pepper and cook for 3 minutes until slightly softened.
