  • Basmati RicePantry2 oz
  • Black BeansPantry½ cup
  • Frozen CornFrozen½ cup

Method

  1. Rinse the basmati rice and simmer in salted water for 12 minutes until tender; drain.
  2. Cube the chicken breast and slice the bell pepper.
  3. Heat a splash of oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes, stirring, until browned and cooked through to 165°F.
  4. Add the bell pepper and cook for 3 minutes until slightly softened.
  5. Stir in the black beans, corn, chili powder, and cooked rice, and cook for 3 minutes until heated through.
  6. Sprinkle the cheddar over the top and let it melt for 1 minute off the heat.
  7. Finish with chopped cilantro before serving.
