Method
Preheat the oven to 425°F.
Halve the baby potatoes, toss them with the olive oil, thyme and salt and roast for 15 minutes.
Mix the mustard and honey and rub it all over the pork tenderloin.
Push the potatoes to the sides of the tray, lay the pork in the middle and roast for 18 minutes.
Add the trimmed green beans for the last 8 minutes so they keep some bite.
Rest the pork for 5 minutes before slicing it thickly, then spoon the tray juices over.
