Method
Put the pork loin between two sheets of parchment and beat it flat to about a quarter inch thick.
Season it well, then coat it in flour, beaten egg and panko in that order, pressing the crumbs on firmly.
Heat the air fryer to 400°F and cook the schnitzel for 12 minutes, turning once, until deep golden and cooked through.
Cut the baby potatoes into wedges and toss them with a little oil and salt.
Cook the wedges in the air fryer for 16 minutes alongside or straight after the pork, shaking the basket twice.
Serve with the parsley scattered over and the lemon cut into wedges for squeezing.
